The Cookery School
The cookery school is housed in the ground floor of the converted Georgian stables, which overlook the castle turret and parkland. Light and airy throughout, the stylish décor is comfortable – a relaxed environment well disposed to the appreciation of good food and fine wine!
The demonstration kitchen and Cookery School Dining Room both overlook the castle turret and parkland, with offices, a Cook shop, toilets and preparation kitchen to the rear.
The course programme for 2012 offers a wide choice of courses. The two-day cookery courses are designed and run by our resident Celebrity Chef, Rosemary Shrager these concentrate on the classical preparation of food, and mastering the essential techniques. These would include patisserie, baking, sauces and soufflés, boning and filleting, amongst many others. Rosemary has also introduced a new range of day courses including bread making and sauces. Other courses also include Sushi making day courses and evening demonstrations, Foraging courses, Friday night Curry Club and Preserve Making courses.
The day courses are run by our new Cookery School Head Chef, John Rogers, who has recently taken over from Robert Taylor. John's Dinner Party courses consist of three modules, all offering equal depth and range of cuisine but allowing for returning guests to enjoy three bites of the cherry and build up an ever wider range of recipes and skills. He also runs the Food of Love courses for Valentines, Festive Fare courses in December and the hugely popular Chef's Table.
There are also food courses for children during the school holidays which are designed and run by Gilly Robinson, who is Rosemary Shrager's assistant. Gilly's courses focus on the basic essentials of family-friendly food, geared up to practical recipes that offer flexibility and scope for variety. Gilly also runs the `Christmas-in-a-Box' courses which consists of an afternoon of cooking and preparing an entire christmas meal for six, all of which can be taken away and frozen to be served at a later stage at your convenience.
